So soon after breakfast and so far from lunch and I needed a little snack. Something sweet but with a little kick in the aftertaste. I found about a dozen dried apricots in the jar. So I made five of these little jewelled beauties and saved the rest for later.
Apricot nibbles
Take a dried apricot and place on it a tiny wedge of brie cheese.
Crown the top with a jewel of crystalised ginger.
Mmmmm...sweet, sour, creamy and the ginger left just the right amount of lingering flavours.
