Sort of an Omelette, Maybe a Fritatta

Dsc_0016_2

You know the feeling...what can I have for lunch that is a little more exciting than a cheese sandwich. So you go to the fridge and spy the eggs you bought at the market on the weekend and the half  packet of feta cheese. Ah ha you think, I have the beginnings of a meal, maybe an omelet.  But there's two of you which means you have to make two omelets.  Why not put it all together in one dish and bake it in the oven?

Grease an oven proof dish and add a layer of halved plum tomatoes and sprinkle with salt and pepper.
Bake in a moderate oven for 20 minutes. Remove dish from the oven.
Tear up some basil leaves and add to dish.
Add a few cubes of feta cheese.
Cube some bread and add to dish.
Beat 4 eggs with half a cup of milk and  pour over mixture.
Bake 20 minutes in a moderate oven.

Serve for lunch with some relish or chutney.

Mmmm...looks good! I am a big fan of eggs, omelets, fritattas, etc...and I was just thinking about what to have for lunch :)

Guess what...I finally have an entry for Donna Day! Hooray! :)

Sometimes meals do seem to pull themselves together and it just seems so smooth and so good. Gorgeous bread cubes there!!

this sounds so easy and hearty for lunch.

Yummy! Simple and looks delicious!

That sounds amazing. Aren't you clever? I should imagine it would work with regular goats cheese, as well.

PS I tagged you re. 10 things I would never do. (Sorry).

I love the idea of adding the bread to the mix!

A major leap forward in lunch technology!

Joey - great to have your entry in HHDD.
Tanna - I love it when a plan comes together;)
Kat - yes hearty and easy.
ML - Simple yes, delicious yes.
Roger - would be great with goats chese . I used a goats cheese feta.
Emma - saves on getting the toaster out;)
Golly - LOL:)

I absolutely love this!

I just made omlettes for dinner, this looks a much better way than than standing there cooking one at a time.

Bea - thanks. That is high praise coming from such an amazing cook as yourself.
Beccy - and by throwing the bread cubes in you don't need to make any toast either.

Well that's my lunch sorted I guess it will work with any type of cheese. Thanks for an eggcellent idea.

Just to let you know I used your recipe today. It was a delicious filling meal. I didn't get it prepared until 3:30pm so it served as a late lunch early dinner combined as my husband was eating out tonight. Left me plenty of time for blogging.

Chris - and it is so easy isn't it.
