A Taste Of Yellow - Lemons

Before I went to bed last night I mixed up a batch of my famous English Muffin dough and made a quick jar of Lemon Curd . Up at 5.30 am, I formed the dough into discs and left them to rise while I showered. Baked to perfection in the fry pan, toasted and topped with butter and lemon curd, we sat down and watched the Australia Cricket team cruise to victory in the World Cup on a rather wet day in Barbados.

Oh ma gah! It's beautiful.
I need to participate, especially since I've already participated in the disease.
But I'm really, really busy moving. Ooh.

Barb, one great mind thinks alike! I'm just mixing up my batter for English muffins for breakfast tomorrow, but I'm using my sourdough starter. This is my first try of making sourdough starter and it works!! I'm very happy! And I made my lemon curd as well!!

I'm getting ready to have another go at the English Muffins, so this was perfect timing. I've never made lemon curd, but this looks delish! I just printed out this recipe. Thanks again Barbara! You really are improving my breakfasts. : )

Now I have to make them they look divine. Have you ever had any left over? If so how long do they keep? Freezing is a good option I guess.
