Nutritionally walnuts are packed full of goodness. Of course adding flour, butter and sugar probably negates all the good they do but these little cookies are rather nice with a coffee.

WALNUT COOKIES
85 grams ground walnuts (Pulse walnuts in food processor to grind)
100 grams sugar
150 grams plain flour
130 grams unsalted butter at room temperature
2 teaspoons vanilla essence
1 cup icing sugar
METHOD
Preheat oven to 165C
Place walnuts, sugar, plain flour, butter, vanilla essence in a bowl and mix together.
Place teaspoonfuls of mixture on a tray covered with baking paper. Allow room for spreading.
Bake in oven 15 minutes or until cooked.
Leave on tray for 5 minutes.
Place icing sugar in a wide bowl. Dip warm cookies in icing sugar to cover both sides. Place on cake rack to cool.
Store in airtight container. I place mine in the freezer and remove them as needed. They defrost in a few minutes.
