Thank You To The Daring Bakers

Beggsml3What a wonderful surprise when the Daring Bakers May posts started appearing on the web today.  In support of LiveSTRONG With A Taste Of Yellow the Daring Bakers had been encouraged to decorate their fabulous Opera cakes in pastel colours. If you check the Daring Bakers blogroll you will see their fabulous  cakes.

Thank you for this kind and thoughtful act. It really made my day. I am a little overwhelmed with your lovely words. I feel very blessed to be a part of the caring and loving group of people that make up the  food and wine blogging community. You are all very special. Thank you Darling Daring Bakers.

A special thank you to the originators of the Daring Bakers, Ivonne and Lisa. I very much appreciate your support.

LiveSTRONG With A Taste Of Yellow is over for another year. Thank you to everyone who participated. It is because of you it was so successful. Thank you to those who shared their stories. I hope you found comfort in reading how others are coping. To the lucky ones not touched by cancer thank you for your support. With so many blog events available I appreciate your finding the time to participate and  support  LiveSTRONG Day in the blogging community.

One More Taste Of Yellow...and Gremlins

Begg3 Firstly I'm having further problems with my blog which go back to the previous problems I had. Up until this morning everything  was working, then Typepad went down and when Typepad came back up  my blog decided to be silly. So you may have problems assessing a page and you will have a problem leaving a comment. If you remove the words "my weblog/" from the browser bar comments will work.

I hope to sort it out soon. It couldn't have happened at a worse time.

We have one two more participant to A Taste Of Yellow.....and that brings us to  180 181.   From Chuck in San Francisco at Sunday Nite Dinner the 180th entry is Spicy Corn Salad.
Chuck
...and one I missed, number 181....
Ranji

LiveSTRONG With A Taste Of Yellow Round Up 2008 Part 1

Beggsml3

Drop dead gorgeous
I'm dying to know
I nearly died of embarrassment
To die for
I'm dying to go on holiday, give up work, move house, get married, whatever.

I don't think so.

No one ever died  because they were attractive.
No one died because they didn't know the latest gossip.
No one ever died of embarrassment.
Did you die when you ate that creme brulee, chocolate cake or drank vintage champagne?

.............and no one ever, ever died because they didn't go on holiday, continued to work, stayed in the same house, didn't get married, or whatever.

People die from accidents, heart attacks, any number of diseases like liver disease or kidney disease. Some people die because they are born into poverty in a third world country and some people die in war.

Then there are those who die from cancer.  Mothers, fathers, grandparents, sons, daughters, sisters, brothers, aunts, uncles, friends, work colleagues, nieghbours.

Happily there are also those who beat  cancer. The ones who discover it early. And that is the secret to beating cancer - early detection. Which is why they have tests like mammographies, PAP smears, colonoscopies, PSA's, skin and mole checks. If you have a history of cancer in your family these checks are even more important. Discuss cancer screening with your doctor next time you visit.  It could save your life.

I would like to thank the 179 fabulous bloggers who cared enough to participate in LiveSTRONG With A Taste Of Yellow - 2008. Thank you for sharing your stories.   I cried, I laughed and I rejoiced at the stories you shared. I'm honoured some of you chose to share your very personal stories with me via email, stories too painful to share with the world.

While I was writing the round up I received a call to tell me a  friend had lost her battle with cancer. There was a big difference in our ages and until we were both diagnosed with cancer we weren't close. Our friendship developed as we shared our cancer journey. Some of our conversations were about death and our theories on an after life.  Those around us found it hard to comprehend how easily we talked about death. How we could laugh about how we wanted to look in our coffins. For her it was to be no make up at all , for me it is to be no rosy cheeks or red lipstick. She'd chosen her outfit already - something simple. I'm in no hurry to choose my outfit. I'm thinking something white and angelic :) No harm in looking the part. Don't be shocked when your loved ones use humour to talk about their cancer  - it helps us overcome our fears.

As much as I use humour to talk about my cancer, I no longer use the expressions - drop dead gorgeous, I'm dying to know, this chocolate is to die for, I'm dying to go on holiday, whatever.

I'd like to dedicate A Taste Of Yellow 2008 to my friend Augusta . A remarkable woman with a great sense of humour, she enjoyed whiskey, Scotch Finger biscuits, good cheese and semillon wine.

Because there were so many entries I have split it into two posts. There will be a link to the second part at the end of this post. Butter-2

On another note this is about music - but as Shakespeare wrote if music be the food of love, play on.

I recently received a selection of CDs from Putumayo. You can read about them on their website but here is a paragraph from their about page.

The company’s commitment to helping communities in the countries where the music originates has led to the label contributing more than a million dollars to worthwhile non-profit organizations around the world. After Katrina, Putumayo embarked on a campaign to raise funds and awareness for musicians and others affected by the hurricane. Putumayo has contributed more than $250,000 of the proceeds from New Orleans and its other New Orleans-themed CDs to charities working in New Orleans and New Orleans musicians. Other charitable recipients include Coffee Kids, Oxfam, Mercy Corps, Search for Common Ground and more including recently Slowfood.

On the weekend I sat down with the musicians in the family, (I'm actually the only one who can't sing or play an instrument), to judge the quality. I knew I liked the music but an opinion from a professional is always useful. It was favourable to the point of they were impressed.

There are even a couple of recipes on the food themed ones titled  Music From The Wine Lands and Music From The Chocolate Lands.  Naturally they happen to be my favourites.

As with all freebies I receive I am under no obligation to write about them favourably or otherwise. I do not run adds on my site and as I no longer work for an income any freebies related to my interests are always received gratefully. If I do like the item I am happy to share my thoughts with my readers.

Luscious Lemon Dessert For LiveSTRONG Day

Dsc_0012
It is 12 months since our dinner at Aria.  A lot has happened in the past twelve months and as much as I wanted to cook from  Matt's book  it didn't happen. Looking for a lemon based dessert last week  I found Matt had the perfect recipe.  I combined elements from  two dishes to create this dessert.

Lemon Cream with Honey Tuiles and Blueberries

Honey Tuiles

40grams unsalted butter
50 grams icing sugar
85 grams honey
60 grams plain flour

Cream butter and sugar until thick and pale.
Mix in the honey, then stir through the flour.
Leave the mixture to rest for 1 hour at room temperature.
Preheat oven to 160C.
Line a baking tray with baking paper, then spread the mixture into six 6cm x 1mm rounds. (this is quite difficult and mine were probably a little thick)
Bake the tuiles for approx 10 minutes or until they are a deep golden colour. Leave to cool.
Any left over mixture will keep in the fridge for 2 weeks.

Lemon Cream
2 eggs
120 grams caster sugar
80 ml lemon juice, strained
finely grated zest of 2 lemons
150 grams unsalted butter, diced
200 grams thickened cream, whipped

Lightly mix the eggs and sugar in a bowl until sugar has dissolved; set aside.
Place the lemon juice and zest in a small saucepan and bring to a simmer, then remove from the heat and whisk in the egg mixture.
Return the saucepan to low heat and cook until the mixture thickens.
Take the saucepan off the heat and whisk in the butter piece by piece.
Leave to cool, then cover with plastic film and refrigerate. When ready to serve, fold in the whipped cream.

To Serve
Place Lemon Cream in a glass dish, top with blueberries and a Honey Tuile.  You could replace the blueberries with raspberries for an even better combination. Raspberries are wickedly expensive here sadly.

Don't forget to post your LiveSTRONG Day entries by 19th April. You will find the rules here .

A Little Yellow For LiveSTRONG Day 2008

Dsc_0006_2
A little more yellow food for LiveSTRONG Day 2008 .

I first tried this soup as a child at the home of  a Cypriot friend.  To my young Australian palate it was one of those food moments you remember forever.  A soup with eggs and lemon juice -  hmmm - that's different - I like it.

Checking  my cookbooks there doesn't seem to be any variation on the ingredients of chicken stock, lemon, rice and eggs.  This recipe is from the The Cooks Companion by Stephanie Alexander.

Avgolemono  - Greek egg and lemon soup

1.5 litres well flavoured chicken stock
salt
freshly ground black pepper
100 grams long grain rice
3 large eggs
juice of 2 lemons

Bring stock to simmering point. Adjust seasoning and drop in rice.
Simmer for 15 minutes until rice is cooked.
Beat eggs and lemon juice until frothy.
Add a ladleful of hot stock to egg mixture and continue to whisk.
Remove stock from heat and let cool for 2 - 3 minutes.
Tip egg mixture back into stock, stirring to mix well.
Taste and season.
Serve at once.

Don't forget LiveSTRONG Day entries should be posted by 19th April. The round up will be posted to coincide with LiveSTRONG Day on May 13th.

I've added a second element to this years event which I really hope you will join.  A photo competition. You know you all love to play with your camera as much as you play with your food.

To enter the photo competition you will need the Lance Armstrong yellow wrist band. They are available to purchase on line  here at the LiveSTRONG store .   To be considered in the judging  the yellow wristband must appear in the photograph of the recipe you are are submitting to A Taste Of Yellow. LiveSTRONG With A Taste of Yellow Roundup

Dsc_0007_2
When I was diagnosed with cancer in June 2004 I was far from home. Bryan and I had just spent 6 weeks walking across Spain on the Camino de Santiago .  On our last night in Santiago de Compostela  we went out for dinner ( I ate Jamon Iberico ) with a group of friends we had made on our walk. After dinner we decided it would be a good idea to walk past the cathedral one more time, stop off in a bar for one last glass of  Cava before going our separate ways in the morning. In front of the cathedral is a spot marked on the ground where if you lay down on your back with your head toward the cathedral you  get a perfect shot of the cathedral. Thinking this was a good idea I lay down, took my perfect  photo and as I got up a sharp pain shot through my right side.  Appendicitis everyone said. We continued on to the bar and sat drinking and reminiscing until early in the morning, all the time I had this dull ache in my side. The next day we headed in to Portugal for a couple of days on the way to Madrid where we planned to spend a week before returning home to New Zealand. I thought I should see a doctor before getting on a plane in case it was appendicitis. We arrived in the village of Ponte de Lima , found  a delightful little room above a restaurant for a couple of nights, then went  looking for a doctor.  The next thing the local doctor had me in the back of an ambulance and I found myself speeding off to Viana do Castelo   which had a bigger hospital and surgeons.  Within 24 hours I'd had life saving surgery. A few days later I was given the news I had cancer. On that day my whole life changed.

Back in Auckland and undergoing chemotherapy,  a friend who works for Nike, brought around a Lance Armstrong  book for me to read.  That year I watched the Tour de France  for the first time, and watched Lance win his 6th Tour.   The following year I didn't care if I woke the rest of the family, (in the southern hemisphere it plays live on TV in the middle of the night), as I jumped up and down screaming for Lance and his seventh Tour win.   For  many of us diagnosed with cancer, Lance has become a hero in our own fight to overcome  the disease.

Today I'm still fighting the disease and I hope one day to be given the "all clear" from my oncologist.

I thank you all for supporting A Taste Of Yellow. This event was my own little thank you to Lance for the strength he has given me over the past three years. I couldn't have done it without you....and to those of you supporting family members or friends  - they can't do it without you either.

Here is my round up of  the delicious yellow inspired food created by the greatest bunch of bloggers in the world - all 143 149 of you.  Many of you shared stories, both heart breaking and  heart warming. I thank you for the hope you have given me. I hope those people  fighting cancer themselves or are supporting  a loved one  will also gain hope from your stories. I decided against mentioning every cancer story in the round up as I'd like you to visit the entries to find them.

Susan at  Running For Lisa raises money for cancer research by running in honour of her sister Lisa who died 8 years ago from cancer. Lisa was a real foodie and a great cook. Susan shares with us a recipe from one of Lisa's books.

Sugar Tart

Ingredients:
tart pastry or a 9-inch tart shell
3 eggs
3/4 cup (6oz/185g) sugar
2 tablespoons cornmeal
1 tablespoon cider vinegar
1/4 teaspoon salt
7 tablespoons (3.5 oz/ 110g) unsalted butter, melted

For the topping:
1/3 cup (3oz/90g) sugar
1 tablespoon unsalted butter, chilled
1/2 teaspoon ground cinnamon or nutmeg

Preheat an oven to 425 Farenheit (220 C).  Roll out the pastry and use to line a 9-inch (23-cm) tart pan.  Or cut the pastry into squares and form individual free-form tarts; arrange on a baking sheet.  Bake the crust fully, until browned and crisp.  Cool completely before filling. Reduce oven temperature to 325 F (165 C).

In a mixing bowl combine the eggs, sugar, cornmeal, vinegar, salt and butter.  Beat until smooth.  Pour the egg mixture into the tart shell. Bake until the custard is barely set and the center stillquivers, about 30 minutes.

Meanwhile, make the topping.  In a small bowl combine the sugar, butter and cinnamon or nutmeg. With your fingertips rapidly work the ingredients together until blended; the mixture should be light and dry. When the tart has baked for 30 minutes and is barely set, carefully remove it from the oven and sprinkle it with the topping.  Return the tart to the oven and bake until the filling is set and the topping has melted a little, about 10 minutes longer.

A Taste Of Yellow - Eggs

Dsc_0063

Breakfast at the Waterline Café in the tiny village of  Kohukohu  on the upper Hokianga Harbour . We'd spent the night in Rawene which quite frankly was a huge disappointment.  We had one of our worst meals ever at the Rawene Hotel. The only other option was  a takeaways shop with a menu that read greasy.  Rawene also has the  Boatshed Café but it is only open for lunches.

There is a car ferry that connects Rawene with Kohukohu and when you drive off the car ferry the Waterline  Café is the first building on the right. It's not a big village you can't miss it. They also open for dinner on Friday evenings.  What could be better than sitting on the deck over the water enjoying a morning coffee...or a glass of wine later in the day looking at this view.

A Taste Of Yellow -Sand

Imgp6818
I'm back from a few days up north. The only yellow I've seen, apart from the yellow flowers my friend Sue had especially arranged when we called in for lunch at Dargaville, was the yellow sand on Ninety Mile Beach.

Once I got over my fear of my dune buggy tipping over on the rocks I ripped along nicely reaching speeds of 68kph on the hard sand and dropping down to about 30 in the soft sand. The rocks I managed by going fairly slowly at about 9k.

It is head down now as I read through the many entries for  A Taste Of Yellow and finish the round up ready for 16th and LiveSTRONG Day. Thank you everyone for your entries.

A Taste Of Yellow - Tumeric

Dsc_0006_2
TUMERIC SPICE RUB FOR CHICKEN
Crush a couple of cloves of garlic, add a teaspoon each of Maldon salt flakes, tumeric, ginger and chili. Drizzle a little olive oil over and mash together.  Butterfly a chicken , make slashes in the thick parts, rub spice all over chicken and into the cuts. Grill or roast as desired. I fan grill in the oven at 220C for 20 minutes, turn grill off and lower temperature to 180C on the fan cycle for a further 40 minutes.  I've included the instructions for butterflying chicken but I don't go to all that bother for a family dinner. I just cut the chicken down the middle and spread it out.

Tomorrow I'm taking a few days off to go north. I've typed up the entries that are already in for A Taste Of Yellow .  Actually I typed them up twice.  During the week our area suffered a major power cut while the file was sitting open on the computer. Although I'd saved it in typepad as I added each entry I lost the lot - about 28 entries at the time.

We are going herehere ,  and here .   It's autumn here so I won't be swimming but I will be riding a dune buggy.

As I will be away until 9th May you have a few extra days to get your Taste Of Yellow  entries to me at  atasteofyellowATgmailDOTcom

A Taste Of Yellow - Bananas

Dsc_0007
You can see I've already eaten one - well someone had to taste test to make sure they were okay...and they were. More than okay I'm happy  to say.

Oops I accidentally published this post before I'd finished posting it....  I was about to tell you I'd received a package in the mail recently. It had come from Amazon and inside was a lovely note from a famous blogger  to say it was a gift.  If the blog awards had a category "worlds nicest blogger" I'm sure Sam would win.

Ripping the package apart, as you do when something arrives from Amazon, I found my gift was a cook book written by another famous blogger.   Which is how I came to have a copy of Super Natural Cooking by Heidi Swanson. Thank you Sam. It is full of tempting photographs, healthy recipes, useful information and a rather cute guy on page 184. ...just after the Chocolate Chip Cookies.

Heidi  has kindly allowed me to post her recipe for Espresso Banana Muffins.

ESPRESSO BANANA MUFFINS
2 cups whole-wheat flour
2 teaspoons aluminum free baking powder
1/2 teaspoon fine grain sea salt
1 1/4 cups chopped toasted walnuts
1 tablespoon fine espresso powder
6 tablespoons unsalted butter at room temperature
3/4 cup natural cane sugar
2 large eggs
2 teaspoons vanilla extract
1 cup plain yogurt
1 1/2 cups mashed over ripe bananas (about 3 large bananas)

Heat oven to 375F, position the racks low in the oven, and line 12 muffin cups with paper liners.

Combine the flour, baking powder, salt, 3/4 cup of the walnuts, and the espresso powder in a bowl and whisk to combine.

In a separate large bowl or a stand mixer, cream the butter until light and fluffy. Beat in the sugar and the  the eggs one at a time. Stir in the vanilla, yogurt, and mashed bananas, then briefly and gently mix in the dry ingredients; over mixing will result in tough muffins.

Spoon into the prepared muffin tin ( an ice cream scoop works well), top with the remaining 1/2 cup walnuts, and bake until golden, about 25 minutes. Fill the cups 2/3 full for regular muffins or to the brim for a big topped version. Cool in the tin for 5 minutes, then turn onto a wire rack to cool completely.

I don't have instant coffee in my pantry so replaced it with Milo, but I think the coffee powder would  be  better.  Heidi must have bigger muffin pans than me because my mixture produced 18 muffins.

A Taste Of Yellow - Butter Beans

I bought a bunch of butter beans at the shops this morning, knowing by the time I arrived home I'd have a plan for them.

YELLOW BEAN AND RED PEPPER SOUP
Soften a chopped onion, garlic and diced potatoes. Toss in the chopped peppers( also called capsicum) and beans. Cover with stock or water. Season.
Cook until tender - about 20 mins.
Blitz in blender.
Serve.

Quantities will depend on how many you are serving. I used 1 onion, 2 small potatoes, 2 large red peppers, a handful of beans. It made about 4 servings.

A Taste Of Yellow - Lemons

Dsc_0007
Before I went to bed last night I mixed up a batch of my famous English Muffin  dough and made a quick jar of  Lemon Curd .   Up at 5.30 am, I formed the dough into discs and left them to rise while I showered.   Baked to perfection in the fry pan, toasted and topped with butter and lemon curd, we sat down and watched the Australia Cricket team cruise to victory  in the World Cup  on a rather wet day in Barbados.

A Taste Of Yellow -for Livestrong Day

Lemonm

Supportinglaf_2c

A TASTE OF YELLOW is your chance to participate in LIVESTRONG Day by doing what food bloggers do best - bake.

LIVESTRONG Day is the Lance Armstrong Foundation's (LAF) grassroots advocacy initiative to unify people affected by cancer and to raise awareness about cancer survivorship issues on a national level and in local communities across the country.  LIVESTRONG Day 2007 will occur on Wednesday, May 16.

You are wondering why someone in New Zealand would be supporting an event based in the US aren't you.  Well for the simple reason cancer knows no boundaries.  There isn't a person in the world who hasn't been touched by cancer in some way. Either a family member, a friend, work colleague, neighbour or even themselves.  One of my best friends and my Dad both died of cancer in the same week.  Twelve months later I was diagnosed with cancer and am still fighting the disease, hoping to be cancer free one day. To raise awareness in any country is to raise the level of awareness world wide.

I'm asking all bloggers to participate in the blog event  A TASTE OF YELLOW by making a dish containing some type of yellow food. This  can be anything you like as long it features a yellow food. Some ideas to get you started are lemon, banana, saffron, corn, eggs, cheese.

On the 16th May to coincide with LIVESTRONG Day 2007 I will post a round up of all the entries.  Please make and post your entries using any yellow coloured food and send them to me at atasteofyellowATgmailDOTcom   before the 7th May.

The A Taste of Yellow  has been approved  by the Lance Armstrong Foundation as an official LIVESTRONG Day event . I am organising the event to raise awareness of cancer.  However if you wish to make a donation you can do so by visiting the Lance Armstrong Foundation donation page.

Please support  LIVESTRONG Day in your city. You will find a list of all events  here  .

The beautiful Lemon Meringue Pie  above is a creation of Ivonne at  Cream Puffs In Venice . Thanks Ivonne for allowing me to post your photo of delicious  yellow food.

UPDATE: THE ROUND UP OF ALL THE ENTRIES TO A TASTE OF YELLOW HAS BEEN POSTED    HERE.  GO VISIT AND SEE THE 148 ENTRIES OF YELLOW INSPIRED FOOD.
