A Rewarding Plate of Antipasto
A little weekend antipasto.
This is a snack we enjoyed when my son Chris was visiting last week. He worked hard on editing a photo for me for the LiveSTRONG With A Taste Of Yellow round up. I was really pleased with the final result and felt he deserved to be rewarded with some of his favourite foods. Visit on the 13th May to see how clever he is.
Gorgeous picture. I'm looking forward to the round up.

Delish! You know I could also do some editing for you when Chris is too busy just make sure you have eggplants in your pantry :))

Lore - thanks, I always need an excuse for having eggplant in the house as my husband doesn't eat it so I tend to buy it only when someone visits.
Chrisb - It is keeping me busy.
Toontz - the eggplant are so easy to make. I spray the with oil, cook them in my George Forman grill add a squeeze of lemon juice, crushed garlic, salt a little more oil.
