When I was diagnosed with cancer in June 2004 I was far from home. Bryan and I had just spent 6 weeks walking across Spain on the Camino de Santiago . On our last night in Santiago de Compostela we went out for dinner ( I ate Jamon Iberico ) with a group of friends we had made on our walk. After dinner we decided it would be a good idea to walk past the cathedral one more time, stop off in a bar for one last glass of Cava before going our separate ways in the morning. In front of the cathedral is a spot marked on the ground where if you lay down on your back with your head toward the cathedral you get a perfect shot of the cathedral. Thinking this was a good idea I lay down, took my perfect photo and as I got up a sharp pain shot through my right side. Appendicitis everyone said. We continued on to the bar and sat drinking and reminiscing until early in the morning, all the time I had this dull ache in my side. The next day we headed in to Portugal for a couple of days on the way to Madrid where we planned to spend a week before returning home to New Zealand. I thought I should see a doctor before getting on a plane in case it was appendicitis. We arrived in the village of Ponte de Lima , found a delightful little room above a restaurant for a couple of nights, then went looking for a doctor. The next thing the local doctor had me in the back of an ambulance and I found myself speeding off to Viana do Castelo which had a bigger hospital and surgeons. Within 24 hours I'd had life saving surgery. A few days later I was given the news I had cancer. On that day my whole life changed.
Back in Auckland and undergoing chemotherapy, a friend who works for Nike, brought around a Lance Armstrong book for me to read. That year I watched the Tour de France for the first time, and watched Lance win his 6th Tour. The following year I didn't care if I woke the rest of the family, (in the southern hemisphere it plays live on TV in the middle of the night), as I jumped up and down screaming for Lance and his seventh Tour win. For many of us diagnosed with cancer, Lance has become a hero in our own fight to overcome the disease.
Today I'm still fighting the disease and I hope one day to be given the "all clear" from my oncologist.
I thank you all for supporting A Taste Of Yellow. This event was my own little thank you to Lance for the strength he has given me over the past three years. I couldn't have done it without you....and to those of you supporting family members or friends - they can't do it without you either.

Ingredients:
tart pastry or a 9-inch tart shell
3 eggs
3/4 cup (6oz/185g) sugar
2 tablespoons cornmeal
1 tablespoon cider vinegar
1/4 teaspoon salt
7 tablespoons (3.5 oz/ 110g) unsalted butter, melted
For the topping:
1/3 cup (3oz/90g) sugar
1 tablespoon unsalted butter, chilled
1/2 teaspoon ground cinnamon or nutmeg
Preheat
an oven to 425 Farenheit (220 C). Roll out the pastry and use to line
a 9-inch (23-cm) tart pan. Or cut the pastry into squares and form
individual free-form tarts; arrange on a baking sheet. Bake the crust
fully, until browned and crisp. Cool completely before filling.
Reduce oven temperature to 325 F (165 C).
In
a mixing bowl combine the eggs, sugar, cornmeal, vinegar, salt and
butter. Beat until smooth. Pour the egg mixture into the tart shell.
Bake until the custard is barely set and the center stillquivers,
about 30 minutes.
Meanwhile, make the
topping. In a small bowl combine the sugar, butter and cinnamon or
nutmeg. With your fingertips rapidly work the ingredients together
until blended; the mixture should be light and dry. When the tart has
baked for 30 minutes and is barely set, carefully remove it from the
oven and sprinkle it with the topping. Return the tart to the oven and
bake until the filling is set and the topping has melted a little,
about 10 minutes longer.
