I bought a bunch of butter beans at the shops this morning, knowing by the time I arrived home I'd have a plan for them.
YELLOW BEAN AND RED PEPPER SOUP
Soften a chopped onion, garlic and diced potatoes. Toss in the chopped peppers( also called capsicum) and beans. Cover with stock or water. Season.
Cook until tender - about 20 mins.
Blitz in blender.
Serve.
Quantities will depend on how many you are serving. I used 1 onion, 2 small potatoes, 2 large red peppers, a handful of beans. It made about 4 servings.
