COCONUT MILK CLAFOUTI WITH APRICOTS (Adapted from Julia Child recipe)
INGREDIENTS
4 apricots, quartered, stones removed1 1/4 cups coconut milk
3 eggs
1/3 cup sugar
2/3 cups plain flour, sifted
1 tablespoon vanilla essence
pinch salt
METHOD
Set oven to 180 C
Place the clafouti pan into the oven and preheat
While pan is heating place in blender Coconut milk,eggs, sugar, flour, salt, vanilla. Blend on high speed for 1 minute.
Remove pan from oven and place a layer of apricots on bottam of pan. Pour over egg/milk mixture.
Bake in oven for 25 minutes or until cooked. Clafouti is cooked when a knife plunged into centre comes out clean.
I made the coconut milk in my Thermomix. I have never used canned coconut milk to make it so do not how that would turn out. You could try making your own coconut milk by heating dessicated coconut in water, pulverising in blender and straining through muslin cloth.
