My favourite, favourite summer dessert of all time.
I use a cheap $6 Angoves Bookmark Marsala wine. It ain't the real thing but it is eminently suitable for cooking fruit in. Sshh, when no one is looking I take a swig from the bottle...ssshhh.
Place some firm peaches in a pot, drizzle a little honey over, split a vanilla bean and drop it into the pot, pour over half a bottle of marsala....come on...that's only 3 bucks worth.
Simmer peaches until soft, then remove them with a slotted spoon, boil the syrup till it reduces and pour over the peaches.
I love them served at room temperature with pouring cream.
