The legendary Beer Butt Chicken is my son's favourite method of cooking chicken. After first cooking it at his recent bachelor party, he decided to cook it for our Father's day lunch.
You don't need the special stand. It works as effectively by placing the chicken, butt end, over an opened can of beer.
Preheat the barbecue to medium - hot. I have no idea how barbecues work. I just watched the men folk and took photos.
Open can of beer and put chicken butt end over.
Place the can on a tray and cook in the oven or on a barbecue with the lid closed.
Baste the chicken with melted butter (or oil) before placing in the oven.
Every 15 minutes baste with the juices which have dripped down into the tray.
We cooked this chicken for 50 minutes and rested it for 15 minutes before carving.
